I'd like to make a custom build using eps32(lolin32) a 16x2 i2c lcd or a small tft screen + some buttons (i have a 16button board). What do you thing would be the best approach for this project ?

This display won't work on this project, because the current graphics library doesn't support I2C, and Bruce works with LCD displays, so these 16x2 won't do..

if you want to go cheap, it is easier for you to buy a TTGO display and start from there...

I don't need complex graphics, I want a simple display so I can choose what function to run.
