dock icons and mouse over title

Firstly I love this ui....I was wondering about a couple of things for the dock....firstly shortcuts do not seem to pick up icons and I cannot change them....I might have missed something. I also find some dock entries don't show a title on mouse over and again I cannot seem to find a setting to set them....I am a fairly well tech savvy 74 year old but I still need a hand from time to time....thanks
