[Feature Request] Docker images tag versioning

Docker images tags allow to better knows the version desired, besides adds a small layer of security if the repo get compromised and tag latest malicious code injected that could be distributed.

It's also about simple reproducibility. If you want reproducible builds, you need to hard-code a certain version or hash.
