Update windows E2E tests workflow with latest image versions

Currently, it appears that the Windows E2E tests workflow is using outdated image versions, such as pde2e-runner:0.0.1 and mapt:0.7.3. Update the images in the workflow to incorporate the latest changes and ensure an up-to-date workflow
