docs: Updated README file to show taking over ownership of modules.

Description

Updates to show taking ownership of the orphaned modules: application-gateway and application-gateway-web-application-firewall-policy. Removed ORPHANED.md from both module paths and ran Set-AVMModule to update README.md file.
